A little Sweet and A little Boost

A recent idea of mine was a hit with my son, so I have to share it. For a couple of years now, I’ve been adding Earth & Sea Salts when cooking rice to give it a boost of flavor, but the other day I also tried cooking the rice in organic coconut milk. Just replace the water you cook the rice in with coconut milk. I always add a little extra water too. Earth & Sea Salts Thai Chili Blend is perfect to throw in while the rice is simmering. Coconut milk is a staple in Thai cuisine, so I thought these two things would probably work well together. The lime juice, thai chilies and cilantro in this blend make it a perfect partner to the creamy and mildly sweet coconut milk. The sweet factor is probably why my son likes this dish so much.
My favorite rice to use is white jasmine, but I do know that brown jasmine rice would be nutritionally superior. However, I am cooking for a teenager, and sometimes you have to make compromises. I feel fortunate, though, to have a son that is willing to try new things, and then let me know that the idea is a yummy one. Coconut milk also has some health benefits associated with it. The saturated fat in coconut milk is mostly lauric acid, which has been found to have positive effects on the cardiovascular system. Other benefits of coconut milk include possible anti-viral and anti-carcinogenic properties. The main reason I use it, though, is because it makes simple rice simply tastier!
