I created the Thai Chili Blend after two years of beginning Earth & Sea Salts, mainly because I wanted to offer a salt blend with a little kick to it. I perused a local, pepper farmer's harvest to explore and gather inspiration. She helped me decide on using Thai chilies as the foundational flavor and even wanted to trade chilies for Earth & Sea Salts. With a little experience with Thai food, I knew basil and cilantro would complement the chilies nicely. Lastly, some garlic and lime juice never hurt anything. This salt blend has evolved over time to become hotter and hotter with each batch containing more seeds than the last. I think it's perfect now, hot but not over the top. I have found that this salt seasoning works really well with a lot of the same dishes as the Original Blend but creates a completely different effect. Try it rubbed on chicken or steak, sprinkled on salads, eggs and popcorn or added to a stir fry.
